That's so funny, I just asked my mom to email me her pumpkin bread (which I've made as cupcakes/muffins with cream cheese frosting in the past). This is what she sent me:
ReplyDelete1. Preheat oven to 350 degrees.
2. Mix 3.5 cups flour, 2/3 cup water, 2 Teaspoons baking soda, 1 teaspoon salt, 1 teaspoon cinnamon, 1 teaspoon nutmeg, 1 cup oil, 4 eggs, 2 cups pumpkin (15 oz. can), and 3 cups sugar.
3. Grease pans (she uses 5 small loaf pans, but 2 large ones also work, as do 6 mini pans; and I've definitely made muffins with this recipe as well, although I can't remember how many it makes...)
4. Cook for 45 minutes for 5 small pans, or 1 hour for two large pans. (I'm not sure how long muffins take. I'm guessing I based it off of what a boxed mix suggestion.) The center should be moist but not gooey. Use a toothpick to check.

I like this recipe for pumpkin cheesecake (but I don't make the crust I buy one pre-made at the store so it becomes super easy!). I know its not cupcakes but its delish-o!

And cream cheese frosting? A block of cream cheese, 1.5-2 cups powdered sugar added slowly as you mix, and a drop of vanilla.

This recipe looks amazing! You could probably do the frosting with or without the orange peel and orange extract.

ReplyDeleteAnd on another note, I just finished and sent out my save the dates that were magnets I ordered from Magnet Street! I should be posting about it soon on my blog if anyone is interested, but I had to say that I HIGHLY recommend them! I was a pain changing my order and having a million questions but they were fabulous and the magnets we a fantastic quality! Now if only I could find something I need right now to use that discount on... :)
